Melbourne Chef Andrew McConnell and Butcher Troy Wheeler have collaborated to create a concept that is sure to excite Melbourne’s carnivores. McConnell and Wheeler, both passionate about best quality heritage meats and skilled butchery, have joined forces to share this passion with both the wholesale restaurant trade, and the general public. Meatsmith Specialty Butcher & Wine Merchant opened in September 2015 at 273 Smith Street Fitzroy, in the heart of Melbourne’s most exciting food and cultural precinct.
Retail butchery offerings will focus on provenance and quality, alongside a range of premium cooked and cured meats, and artisanal smallgoods and charcuterie. The art of butchery will be demystified by informed and friendly service. As well as meat and poultry, Meatsmith will also house a food store for quality larder essentials including premium oils, dried pasta, tinned goods and organic dairy products. House-made items will include Cumulus Inc.’s famed lamb shoulder (slow roasted for convenience), foie gras parfait, rollmops and pickles. You will even be able to take home a bottle of Rioja to accompany your rib eye – a selection of boutique wines will also be available.
